Ingredients
Rangoon Sunrise – Sesame & Lime
Lotus Chips ( optional ) or Mimi’s Laphet Salad Topper from Poke Bowl Creator pack
Before cooking starts
Preheat the oven to 180′ C. Clean the sweet potato under the running water, pat dry it and cut lengthway half , slice them. Keeping the skin attached dry as much as possible to allow it to crisp up during roasting.
Prepare veggies for oven first
Using hands, carefully pull apart broccoli into smaller florests. In a bowl, place broccoli pieces, sweet potato slices together with a bit of olive oil, salt and peper. Shake them gently to coat all the seasoning into the veggies. Place them on the oven tray mat in the oven tray. I love using oven tray mat because it gives the best result of crispiness without overcooking. Place them into the oven for about 10 min 180’C. After that, take out the broccoli when ready and turn the other sidefor sweet potato slices for another 10 min.
Building the bowl base
Rinse green leaves and pat dry them, set it aside. Drain the can chickpea and rinse under the tap. Chop carrot into small sticks. Cut cabbage into small stripes. In the plating bowl, place the green leaves as the base. Now, assemble carrot sticks, chickpeas, cabbage after each other. Also add broccoli, sweet potatoes on the bowl. The secret of poke bowl is keeping all the ingredients nice and pretty so it let you imagine the taste of the bowl before actually eating it. In a small dish, pour Rangoon Sunrise-Sesame and Lime dressing and place on the bowl, Enjoy!
