Slow Cooking Takes Time

 

I got over a kilo of fresh beef brisket from our local butcher in Seville, country town located in heart of Victoria’s Wine region, Yarra Valley. I was thinking to slow cook them in oven and use them into different meals. At the end, I made Sunday’s Roast Platter, pot pies and delicious winter warmer bowls. Let’s get into the process with me right away. Starting off with seasoning the brisket with some smoked paprika , salt, pepper and mushroom seasoning. Leave the meat for about an hour to absorb all the seasoning in fridge. On the stove, heat up a casserole pot with some olive oil. I got mine from Aldi a few years back and it works wonder and got another one in last year as it is handy to have them in the kitchen. Aldi only has them on special buys so keep an eye on them closely to get them in stores. If you wanna read more about them, I found a good read about them online.

 

Back to the cooking now, brown the brisket over low to medium heat till all sides are sealed properly. In the meantime, prepare your oven space to have room for the casserole dish and pre heat to 180′. For the base, I chopped up some carrots, celery and onions and lay them into the pot under the brisket before adding stock to cover the beef. Now , transfer the whole casserole dish with lid closed into the oven for 4 -5 hours depends on weight of the meat. Once cooked, you can check if the brisket is tender and fall off then it is ready. Rest the dish for about an hour before serving.
