Classic Tea rice & fried egg from Burma

Whilst I love a bowl of white rice sometimes it’s nice to put a bit of flavour through it. Instead of creating a fried rice one thing I love to do is mix a tablespoon or two of the Tea Sauce through the rice as it adds great flavour to it whilst keeping it super healthy. Doing this is inspired by the “Laphet tamin” which is a version eaten in Burma where pickled tea leaves are mixed through freshly cooked rice. I then top this with a fried egg, some sliced cherry tomatoes, shredded cabbage and Sunkissed crunch. There’s some flexibility with this recipe as some of the fresh ingredients can be swapped for sliced carrots and cucumber if you prefer. It’s that easy to have a tasty and hearty lunch!
